Delicata squash rings with cinnamon apples

Apple pie flavor without the guilt!

Ingredients
  • 1 delicata squash (about 1 lb)
  • 2 medium apples (Fuji is best, but any sweet, firm cooking apple will do)
  • cooking spray (optional)
  • cinnamon
  • 2 Tbsp sweetened dried cranberries
  • 2 tsp maple syrup (optional)
Directions
  1. Preheat oven to 350 F.
  2. Place two oven racks as close as possible to the center of the oven.
  3. Line two rimmed baking sheets with parchment paper or a nonstick mat like a Silpat. (In a pinch, you can also line with foil and coat with cooking spray.)
  4. Cut tops and tails off the squash. Slice squash in half across the equator and scoop out seeds. Slice into rings ¼-inch thick.
  5. Arrange squash rings in a single layer on one of the baking sheets. Spray rings lightly with cooking spray (if using) and sprinkle with cinnamon. Flip rings over and repeat.
  6. Cover squash with foil and bake 25-30 min, flipping rings halfway through cooking.
  7. While squash is cooking, core the apples and slice into rings ¼-inch thick. (If you don't have an apple corer, you can slice apples instead.)
  8. Arrange apple rings in a single layer on the other baking sheet. As for squash, spray rings lightly with cooking spray and sprinkle with cinnamon. Flip rings over and repeat.
  9. Bake apples uncovered for 20-25 min (or until tender) flipping halfway through cooking. (Place baking sheet on a separate rack and staggered from the squash for even heating.)
  10. Stack alternating rings of squash and apples. Sprinkle with cinnamon and cranberries, drizzle with optional maple syrup, and enjoy!
