Blissful Blueberry Breakfast Bowl

Sweet, icy blueberries melt tantalizingly over cinnamon-vanilla hot cereal. Make this bowl with oatmeal, brown rice farina, buckwheat cereal, or grits!

Ingredients
  • 1 serving prepared plain hot cereal: oatmeal, brown rice farina, buckwheat cereal, or grits (follow package directions--I use the microwave)
  • 1 Tbsp ground flax seed
  • 1 Tbsp maple syrup OR 1½ Tbsp date paste
  • ¼ scoop Vega Vanilla Protein & Greens Powder (optional; see note)
  • ½ tsp vanilla extract
  • ⅛ tsp cinnamon
  • pinch of salt
  • heaping ½ c frozen blueberries (see Note)
  • Vanilla almond milk (optional)
Directions
  1. Add all ingredients except blueberries to prepared hot cereal and stir to combine.
  2. Top with frozen blueberries and enjoy immediately.
  3. Pour on a splash of sweetened almond milk for a beautiful, blueberry-swirl treat!
Notes
-Recipe as shown uses creamy brown rice farina from Bob's Red Mill. I've also used oatmeal, corn grits, buckwheat hot cereal, and quinoa flakes, all of which are delicious.
-I know that protein powder isn't ideal, but I really love the flavor and texture that Vega Vanilla Protein & Greens adds to this hot cereal. If you omit it, you may want to add a little extra sweetener.
-Try your frozen blueberries before making this to ensure they're sweet! If not, thaw your berries and sweeten them before adding as a topping. I recommend Whole Foods brand organic frozen blueberries if you can get them; they're reliably delicious.
