Better-Than-Fried Green Tomatoes

While not fried in oil, these tomatoes are still a special treat, higher in fat* and salt than most of my recipes. That said, summer is short, and for me, they're worth the splurge! Eat straight out of the oven, or dip in marinara sauce or Dijon mustard for even more zing.

Ingredients
  • 2 large green tomatoes, cut into slices a little more than ¼-inch thick
  • 1 Tbsp ground flax seed
  • 3 Tbsp water
  • ½ c almond meal
  • ½ tsp seasoned salt
Directions
  1. Preheat oven to 350 °F. Line a rimmed baking sheet with parchment paper.
  2. Combine flax seed and water in a flat, microwave-safe bowl. Microwave for 45 seconds, or until texture resembles egg whites.
  3. In a medium bowl, mix almond meal and seasoned salt (or Mrs. Dash, for a salt-free version).
  4. Dredge each tomato slice first in the flax goo (it's okay if not much sticks), then in the almond meal. Be sure to press each side of the tomato slice into the almond meal so the good stuff sticks. Place on the baking sheet.
  5. Bake for 20 minutes, carefully flip each slice, and then bake for another 18-20 minutes, until golden brown and crispy.
  6. Enjoy!
Notes
*Lower-fat version: Replace half of the almond meal with chickpea flour. I haven't tried it yet, but chickpea flour works pretty well for oven-fried okra (yeah, my family's from the south), so it will likely work here too. Let me know how it turns out!
