42-Calorie Almond Milk Hot Chocolate

This quick dairy-free hot cocoa is the healthy way to get your chocolate fix. A pinch of instant coffee deepens the cocoa flavor, while almond milk makes it creamy. It only tastes decadent!

Serves: 1 cup
Ingredients
  • ¼ c water
  • 1 Tbsp cocoa powder (heaping)
  • 2-4 packets no-calorie sweetener to taste (SEE NOTE)
  • pinch of instant coffee (optional)
  • ¼ tsp vanilla extract (optional)
  • ¾ c unsweetened almond milk (I use unsweetened vanilla Almond Breeze).
Directions
Fork method
  1. In a mug, microwave ¼ c water for 30 seconds.
  2. Add the cocoa powder, Truvia,* instant coffee, and vanilla extract to the hot water. Whisk with a fork for 5-10 seconds until everything has dissolved.
  3. Add the almond milk and mix until smooth.
  4. Microwave for 1-1½ minutes. Give it a final stir and enjoy!
Notes
*UPDATE MARCH 2023: I used to use Truvia in this recipe. However, given the recent study linking erythritol (found in Truvia) to increased clotting risk, I've deleted Truvia from the recipe and begun searching for an alternative calorie-free sweetener. Stay tuned! In the meantime, until we learn more, I suggest avoiding products containing erythritol.
